After the great success of the macérât oil of the black olives from Nyons PDO created by Michelin-starred chef Julien Allano, innovative by its preparation & its original taste, Vignolis continues its exploration of flavors by signing the creation of 3 new macerates, under the Empreinte brand. Exceptional, including the Black Garlic Macérat which we are presenting at SIRHA this year. The Macerats are aromatic oils… and not flavored !, because they are 100% natural and without aromas (natural or synthetic). The macérat oil of Black Garlic from Drôme and its preparation : initially an IGP Drôme white garlic from Maison Boutarin matured at low temperature, without additives or preservatives, the transformation reveals a new food ... and what a miracle, black garlic, sumptuous on the palate: a delicate scent of candied fruit, licorice, undergrowth, lightly roasted balsamic vinegar, deliciously captures your taste buds. Black garlic is macerated in extra virgin olive oil of the Tanche variety, local olive, a jewel of the terroir of the Baronnies of Provence, then is removed after revealing its entire aromatic palette. Like an infusion of garlic, in olive oil ... Exquisite!
