Information
Antiqua is a stone milled flour and therefore unrefined: the grains of wheat are in fact milled just once, to retain all their organoleptic and nutritional properties intact.
Antiqua stands out for its intense aroma and its amber colour, due to the natural bran and wheat germ. Because of this, compared to a flour type 00, It is a more complete source of fibre and protein and contain less carbohydrate.
It is made only with Italian wheats that comes from a short supply: wheat fields are no more than fifty km from the mill and the farmers involved must follow strict specifications for the cultivation of Antiqua.
