The bet was to find the taste of the typical dish of the mussel but in velvety ....
It was therefore necessary to work on the agreement of mussels, spices, wine... in order to remain as close as possible to an authentic version of a very popular dish from the North!
We chose to cook only from French mussels, and to decorate with chili d'Espelette.
