A Revolution in Pasta: Our Wheat, Our Passion In the golden fields of Puglia, our pasta takes shape. It is born from the durum wheat we cultivate with pride and passion, following the principles of Voluntary Integrated Agriculture. Through this environmentally respectful method, we combine organic and conventional practices to produce wheat rich in protein (>14%), free from Glyphosate and Mycotoxins. We don’t just grow wheat; we care for it like family. We collaborate with seed companies to select the best varieties, considering the unique characteristics of our soil and climate. By rotating with legumes every two years, we enrich the soil’s fertility. Our wheat is harvested only when it reaches the perfect moisture level for preservation and is carefully stored in Big Bags according to organic criteria. But the real magic happens in the transformation process. We turn our wheat into Whole Grain Durum Wheat Flour, rich in precious Wheat Germ and fiber. This protein-rich flour enhances the texture of the pasta and reduces starch release during cooking, creating a pasta that is elastic, firm, and non-sticky. To honor the quality of our wheat, we extrude the pasta at low pressure and bronze-die it, preserving its organoleptic characteristics and giving it a rough surface, perfect for holding any sauce. Drying is done at very low temperatures (36°/44° C) to keep all the nutrients of the wheat intact. The wheat germ, the heart of our pasta, is a treasure of wellness: it contains amino acids, fatty acids, minerals, B vitamins, and tocopherols (vitamin E), offering protective and anti-inflammatory benefits for the body. The result is a pasta with an unmistakable flavor that releases the intense aroma of wheat, cooks quickly (8/10 minutes), and holds its shape, offering the digestibility of traditional pasta.
