Fermenson Corsé is a liquid poolish reconstituted by bakers for bakers. By incorporating up to 5% into your traditional bread recipes, you can significantly reduce the salt content of your bread (by 25%). Fermenson Corsé gives breads and baguettes a fine, crunchy crust, a fatty, well-celled crumb and the ability to stay fresh over time. This liquid ferment can be stored at room temperature for up to 6 months after opening.
